With Salmon, Fourth Time Was A Charm.

Friends gave Mr. Hawthorne and me some salmon the other day and I was determined to like it. Somehow. Someway. If you recall, I've already made salmon three different ways, (You'll need to scroll down on that link, since this post comes up first.) all of which weren't bad or salmony. Last night, Mr. Hawthorne prepared salmon cakes to finish off the leftover salmon Timgad we had in the fridge. He took the salmon, maybe 6 ounces were left, took most of the batter off, and combined it with chopped red onion, chopped red bell pepper. an egg, about 1 TB mayonnaise, some pulled pieces of my leftover bread from my pizza dough, and a bit of panko. He fashioned 4 patties and put them in the freezer. Fast forward to today. While I was cleaning out the carport this morning, Mr. Hawthorne fried up the salmon cakes. Cleaning out the carport has been on my to-do list for something like ... I don't know ... maybe 20 years. It is my goal in life to be able to drive my truck into the carport, close the garage, and actually be able to open the truck door and get out. I just made a tiny dent today. But I digress. Back to the salmon. This was hands down the best salmon I've had. He made a terrific sauce for it too: mayo coarse ground mustard creamy Dijon mustard about 1 tsp. crushed capers lemon juice Delicious salmon cakes. Nice job, Mr. Hawthorne.
