I fixed a really nice dinner tonight
for Mr. Hawthorne and me.
And I'd like to thank Sara,
of Sara's Kitchen,
for this recipe for chicken with sage and prosciutto -
yet another recipe I have shamelessly
ripped off from Sara.
I'm telling you -
this chick cooks some good stuff.
I found two chicken bosoms in my freezer,
thawed them out, boned them,
then sliced into cutlets.
In the background, I have a package
of prosciutto and fresh sage from my garden.
I put a couple or so sage leaves on each side of the chicken,
then wrapped the chicken up in a prosciutto slice.
I secured them with toothpicks.
I made a batter of flour, panko,
salt, pepper, ground sage, and hot paprika
and rolled each chicken piece in it.
And here's my plated dish:
sticky sushi rice with butter and soy sauce,
vegetable saute,
and fried chicken with sage and prosciutto.
The soy sauce added just the right amount of
saltiness to the rice.
The vegetables were al dente and sweet,
the walnuts adding a nice touch.
The chicken was perfectly cooked - moist inside,
crunchy, crispy outside.
And the sage was a perfect touch.
Thank you again, Sara, for another lovely, very tasty meal.
Awww, thanks Rosie! I'm glad you liked this recipe, and of course your version looks fabulous :)
ReplyDeleteRosie (and Sara!) that looks good!
ReplyDeleteObviously you learned from Aunt Sandy to not eat the toothpicks. ;)
Hi Rosie, I decided I wanted to make galumpkis and I googled galumpkis and there you were. Your link to this blog was on another website I believe and~shazaam~there you were! That my new friend is the story on how I found your awesome blog! The galumpkis came out great BTW!
ReplyDeleteWelcome, Queenneenee. Glad you found me.
ReplyDeleteAnd Hairball ... What???? I'm NOT supposed to eat the toothpicks????
WHA?????
Looks good, Rosie and Sara. Once my sage starts growing well again I might have to try that (with turkey - darned chicken allergy!).
ReplyDeleteThe toothpicks add great flavor ... don't they?? I am shocked by the use of fresh ingredients, and nary a seasoning packet to be found!
ReplyDeleteThey look delish! Yumm!
Very tasty indeed! We loved the chicken, something to try at home. Thanks for saving us some.
