Dinner At The Hawthornes.

I fixed a really nice dinner tonight for Mr. Hawthorne and me. And I'd like to thank Sara, of Sara's Kitchen, for this recipe for chicken with sage and prosciutto - yet another recipe I have shamelessly ripped off from Sara. I'm telling you - this chick cooks some good stuff.
I found two chicken bosoms in my freezer, thawed them out, boned them, then sliced into cutlets. In the background, I have a package of prosciutto and fresh sage from my garden.
I put a couple or so sage leaves on each side of the chicken, then wrapped the chicken up in a prosciutto slice. I secured them with toothpicks.
For my side dish, I sliced carrots, green beans, celery, and green onions.
I made a batter of flour, panko, salt, pepper, ground sage, and hot paprika and rolled each chicken piece in it.
I heated up peanut oil and fried the chicken pieces 2-3 minutes on each side.
For my veggies, I poured some walnut oil in my pan with butter and heated it up.
I added the carrots first and cooked for a minute or two.
The green beans went in next with maybe a tablespoon of sugar.
Celery and walnuts went in.
And finally, the green onions.
I drained the fried chicken on paper towels.
And here's my plated dish: sticky sushi rice with butter and soy sauce, vegetable saute, and fried chicken with sage and prosciutto.
The soy sauce added just the right amount of saltiness to the rice. The vegetables were al dente and sweet, the walnuts adding a nice touch. The chicken was perfectly cooked - moist inside, crunchy, crispy outside. And the sage was a perfect touch. Thank you again, Sara, for another lovely, very tasty meal.

Looks good, Rosie and Sara. Once my sage starts growing well again I might have to try that (with turkey - darned chicken allergy!).

The toothpicks add great flavor ... don't they?? I am shocked by the use of fresh ingredients, and nary a seasoning packet to be found!

They look delish! Yumm!
