Rosie can make a mean spaghetti
and it's always been a favorite with my Little Hawthornelets.
Tonight's spaghetti is special spaghetti:
the sauce is on its third and final leg.
My sauce first started out as a ragu, or Bolognese sauce,
paired with a Bechamel sauce for
Lasagna Bolognese.
I had about a quart of the Bolognese leftover,
so I made a more
traditional lasagna
with a ricotta filling.
I had about a quart of that sauce left over,
so I'm feeding everyone spaghetti tonight.
I've seen these people eat before
and I know there will be no reincarnations for this sauce.

Youngest Hawthorne, being the thoughtful child he is,
brought me wild onions from the yard.

I sauteed the onions and the pork.

Always pour some water into the sauce containers
and swirl it around and pour all the goodness into the pan.
Cook on a very low simmer.
You don't need to cook this long,
since it's already gone for hours, twice.
But the longer it goes, the better it tastes.

Serve on a nest of spaghetti and top with grated Parmesan cheese.
A side of Schwann's baguette.

I was right.
All the spaghetti is gone.
