Chocolate Pie For My Birthday Boy!

 
 Middle Hawthorne's birthday was December 2
and he requested chocolate pie.
And chocolate pie he got.

 Chocolate Pie Crust
1 1/2 packages graham cracker, crushed
1/4 cup cocoa
1/4 cup sugar
1 stick unsalted butter, melted
Mix all together and press into a deep dish pie pan.
Preheat oven to 375°.
Bake crust for 15 minutes.
Cool completely.

Chocolate Cream Filling 
 1 cup plus 2 TB sugar
3/4 cup heavy cream
3/4 cup buttermilk
3 1/2 TB cornstarch
pinch salt
4 egg yolks
4 ounces semisweet chocolate
1 TB unsalted butter
1 tsp vanilla
1 3/4 cups whipped cream
1 tsp vanilla
1/4 cup confectioners' sugar

In a small saucepan, combine sugar, 3/4 cup heavy cream,
buttermilk, cornstarch, and pinch of salt.
Whisk until smooth.
Place over medium high heat, bring to boil,
whisking occasionally for sugar and cornstarch to dissolve
and for mixture to thicken, about 5 minutes.  
Continue whisking constantly at a low boil for another 5 minutes.

Beat eggs lightly.
Whisk half of the hot mixture into the egg yolks,
to temper the yolks.
Pour the yolk mixture into the saucepan
and whisk over heat until thoroughly combined and very thick,
about 2 minutes.
Pour mixture back into mixing bowl
and whisk in the chocolate, butter, and vanilla.
Continue whisking until thoroughly combined.
Cover the mixture with plastic wrap directly on surface
and refrigerate until cooled to room temperature,
about an hour.

Place 1 3/4 cup heavy cream in a chilled mixing bowl,
add confectioners' sugar and beat with chilled beaters
until stiff peaks form.
Gently fold 1/4 of the whipped cream into the chocolate mixture.
Spoon the mixture into the prepared pie crust
and refrigerate until firm and cool,
at least 6 hours.

Refrigerate rest of whipped cream
until you're ready to serve.

















 

 Shave some bittersweet chocolate over top.


This should satisfy hard-core chocoholics.

That looks to be a most excellent pie. Jellerson loves some chocolate pie, so I will have to make this for him.

PLUS - I am glad you didn't use Oreos for the crust

This was quite a tasty pie, Kathy. The recipe called for oreos, but I made my own crust. And I happen to have a recipe for oreos that's better than oreos.
