The 2014 Rosiethon Continues. Day 5. Cranberry Bars.



Cranberry Bars
1 stick unsalted butter, melted
1/4 cup sugar
3/4 cup packed light brown sugar
2 eggs
1 TB vanilla
1/2 tsp kosher salt
1 cup flour
1/2 tsp baking powder
1/4 tsp ground cinnamon
1/8 tsp ground ginger
1 5-ounce bag sweetened dried cranberries
1  12-ounce bag white chocolate chips

Heat oven to 350°.
Line a buttered 8 x 8 baking dish with parchment paper.  Butter the parchment.
Microwave butter to melt.
Add sugar and beat, then add eggs and vanilla.  Beat until well combined.
Add salt, flour, baking powder, cinnamon, and ginger.  Mix until just combined.  Do not overmix.
Fold in 3/4 cup cranberries and 3/4 cup white chocolate chips.
Pour batter into prepared pan.
Bake 20-25 minutes, until center is set.






Frosting
 Remaining white chocolate chips
4 ounces cream cheese, softened
1 cup powdered sugar
2 TB orange juice

Melt remaining white chocolate chips in a double boiler.  Set aside.
Combine cream cheese, powdered sugar, and orange juice in a medium bowl.  Beat until combined.
Pour in half the white chocolate, reserving the rest.

Frost with the cream cheese frosting.  Sprinkle with remaining cranberries and drizzle with reserved melted chocolate.
