The Rosiethon. Day 10. Pecan Crispies.


 
I decided to switch courses and actually bake a cookie today.
Pecan Crispies.

Pecan Crispies
1 stick unsalted butter, softened
1/2 cup shortening
2 cups firmly packed, light brown sugar
2 eggs
2 1/2 cups flour
1/2 tsp baking soda
1/4 tsp kosher salt
1 cup chopped pecans

Cream butter and shortening at medium speed.
Gradually add sugar, beating until fluffy.
Add eggs, beating well after each addition.
Add flour, soda, and salt. 
Beat until blended.
Stir in pecans.

Drop by level tablespoonfuls 2 inches apart
on lightly greased baking sheets.
Bake at 350° for 12-15 minutes.
Cool slightly on sheets, then move to wire racks.
