The Rosiethon. Day 4. Speculoos Buttons Cookies.

 

So far this year,
7 out of 8 items I've made are new items.
I had to break up the routine this year.
(Magic Cookie Bars were a repeat since I had all the ingredients
and I'm trying to make as much as I can with stuff I have on hand
before I have to make another trip to Food Lion.)

I am making another brand new cookie this year -
Speculoos Buttons Cookies.

Don't know where that name came from,
but I was certainly intrigued by it.

Speculoos Buttons Cookies
2 cups flour
1 TB ground cinnamon
3/4 tsp ground ginger
1/2 tsp kosher salt
1/2 freshly grated nutmeg
1/8 tsp ground cloves
1 stick unsalted butter, room temperature
1/2 cup packed brown sugar
1/2 cup sugar
2 TB molasses
1 egg, room temperature
1 tsp vanilla
1  egg white
red, green, silver, and gold sprinkles
some dragées

Whisk flour and spices in a medium bowl.  Set aside.
Beat butter at medium speed until smooth.  Add both sugars and molasses, continuing to beat until smooth and creamy.  Beat in eggs and vanilla.  Reduce speed to low and add dry ingredients.  Blend well.

Scrape dough from bowl and divide into thirds.  Roll each piece of dough into an 8-inch log. Wrap logs tightly in plastic and freeze for at least three hours.

Heat oven to 375°.
Line 3 baking sheets with parchment paper.
Whisk egg white in small bowl.  Brush onto "logs."
Roll log in the sprinkles to coat.
Slice into 1/4-inch thick rounds.

Bake about 11-13 minutes, until tops are golden brown.
Cool on wire rack.

Make the glaze:
2 cups powdered sugar
2 TB and 1 tsp cold water
Mix well until smooth.  Should be a thick glaze.
Add about 1/2 tsp glaze onto each cookie.  Spoon it on or fill a plastic bag with the glaze, cut a small tip off, and pipe a circle on the cookie.  Decorate wet glaze with sprinkles and dragées.

For logs that need to be frozen,
place in paper towel or toilet paper rolls
to maintain the shape and not flatten.


 Egg white wash.

 Roll in sprinkles.

 Slice.

 Bake and decorate!
