The Rosiethon. Day 10. Coconut Joys.



Happy!  Happy!  Joy!  Joy!
I'm making Coconut Joys.

Coconut Joys
1 stick unsalted butter, melted
2 cups confectioners' sugar
3 cups coconut
3 ounces semi-sweet chocolate, melted

Nuke butter to melt.
Stir in sugar and coconut until well-combined.
Shape into 1-inch balls.
Make an indentation in the middle and fill with melted chocolate.
Chill.

I used the end of a wooden spoon to make the holes.

Fill with melted chocolate.
Yes, Rosie is a messy baker.
