The Rosiethon Has Its Game On. Day 6. Scandinavian Almond Bars.

Scandinavian Almond Bars

Scandinavia Almond Bars
1 stick unsalted butter
1 cup sugar
1 egg
1/2 tsp almond extract
1 3/4 cups flour
2 tsp baking powder
1/4 tsp kosher salt
1/2 cup sliced almonds
2 TB heavy cream

1 cup powdered sugar
1/4 tsp almond extract
1/4 cup milk

Heat oven to 325°.
Cream butter and sugar.  Add egg and almond extract and beat until fluffy.  Stir in flour, baking powder, and  salt and mix well.

Divide dough into 4 pieces and roll each into a log about 12 inches long.  Place two logs on a baking sheet 4-5 inches apart.  Flatten until the rolls are about 3 inches wide.  Brush flattened roll with milk and sprinkle with sliced almonds, pressing into the dough.

Bake 12-15 minutes, or until edges are slightly browned.  While still warm, cut crosswise at a diagonal, about 1 inch wide. When cool, drizzle with almond icing.

Almond Icing
Stir powdered  sugar, almond extract, and milk until smooth.  
Drizzle over cookies.

Almond Icing
1 cup powdered sugar
1/4 tsp almond extract
1/4 cup milk
