A labor of love.
Today it's Lacy Oatmeal Crisps.
Lacy Oatmeal Crisps
1 cup packed brown sugar
1/2 cup Crisco®
1/2 stick unsalted butter
2 cups quick-cooking oatmeal
1/2 baking soda
1/4 tsp kosher salt
1 egg, beaten well
Combine brown sugar, shortening, and butter in saucepan.
Cook and stir over low heat until melted.
Remove from heat.
Stir in oatmeal, baking soda, and salt.
Add egg.
Mix well.
Drop by teaspoons 3 inches apart onto ungreased cookie sheet.
Bake at 375° for 6-7 minutes.
Cool 2 minutes, then remove from pan.
Do not let these cool completely on pan
or you'll never get them up.
Work quickly.
