Day 2 Of My Annual Rosiethon. Orange Pecan Cookies.


  Today, I'm making a new cookie -
Orange Pecan Cookies.

 Orange Pecan Cookies
(Makes 5 dozen.)
1/2 cup Crisco
1 cup packed brown sugar
1 egg
grated zest of one orange
1 tsp vanilla
1 3/4 cups flour
1/4 tsp Kosher salt
1/2 tsp baking soda
1/2 cup chopped pecans

Combine shortening, sugar, egg, zest, and vanilla.
In another bowl, mix flour, salt, and soda,
and stir into shortening mixture.
Stir in pecans.
 Form into rolls 2 1/2" across and wrap in waxed paper.
Chill until firm.
Heat oven to 400°.
Slice 1/8 inch thick.
Bake about 10 minutes on ungreased baking sheet.
When nicely browned, 
remove from oven and let sit about 5 minutes.
Transfer cookies to a cooling rack.
