Today, I'm making Lemon Bars.
For the crust:
1 cup flour
1/4 cup confectioners' sugar
1 stick unsalted butter, softened
Mix together flour and sugar.
Cut in butter with a pastry blender
until mixture resembles coarse meal.
Press into lightly greased 8" square pan.
Bake at 350° for 20 minutes.
While the crust bakes, make the filling.
Filling:
2 eggs
1 cup sugar
3 TB flour
1/2 tsp baking powder
3 TB lemon juice
grated rind from 1 lemon
Beat eggs.
Gradually add in sugar, beating until light and fluffy.
Mix in rest of ingredients.
Pour mixture over baked crust
and bake an additional 25 minutes.
Sprinkle with confectioners' sugar and cut into squares or bars.
