Cleaning out the freezer today.


I found 3 packages of bone-in lamb shoulders (bought on sale several months ago) in my freezer this morning and decided to prepare a meal using them. I chopped up an onion, 3 carrots, 3 celery stalks, and threw in a head of garlic. I love cooked garlic. Added salt and pepper, beef stock to cover, then about a cup of Cabernet Sauvignon.




I baked it about 2 1/2 hours in my clay cooker with the top on it and boy did the house smell good. Here's the finished dish. Very tender, very tasty.
