This is Mr. Hawthorne's Tortilla Soup. There are different variations of this but this particular one used all leftovers. First he heated up the leftover quart of beef stock and added in about 1/2 cup of the leftover rice from Chinese take-out. Then he thinly sliced some leftover pre-cooked pork loin and leftover pre-cooked lamb (Heh, heh, heh ... PRE-COOKED ... that would be RAW, but since Sandy uses it, I will too.) Just when it started to simmer, he added 1/2 bell pepper, diced, some chopped carrots, and about 1/2 onion, diced. (Preferably red, but I was out so he had to use yellow onion.) Cook, until hot, not cooked, since you want these veggies crisp. Add in chopped tomato, 2 tablespoons chopped fresh cilantro, salt to taste, and turn off heat. (Usually, he would add in a chopped avocado at this point and would have used chicken or turkey meat and chicken stock instead of the pork and lamb and beef stock , but I didn't have any avocado. And like I said, this is a variation and we were trying to get rid of leftovers.)
Serve with tortilla chips.
