My Favorite Birthday Cake Which I Make For Everybody's Birthday.

Friday was Good Neighbor Bobby's 64th recipe. I never mark it on my calender because he always tells me when he's out with Buster and I'm out with Dixie. Bobby knows I'll bake him a cake, so he's always sure to let me know when it's his birthday.
The ingredients for my Pineapple Cake: 2 cups flour 2 cups sugar 2 teaspoons baking soda 2 eggs 1 15 oz. can crushed pineapple 1 TB vanilla
Mix all together.
Pour into a buttered 9 x 13 pan. Place in a preheated 350 degree oven. Oh wait. I can't ...
... because the temperature is only 315 degrees. This is what I love about this recipe. The batter is in the pan. And as always, the cake batter is ready before the oven reaches temperature. Remember, I'm setting everything up and taking pictures all this time, too. I noticed the other time I made this the temperature only got to 265 degrees. WHOOT!!!!!
Bake for 35 minutes.
Ingredients for the icing: 1 stick butter, softened 1 stick cream cheese, softened 2 cups confectioner's sugar vanilla
Mix all until creamy and smooth.
Be sure the cake has cooled before frosting, else the frosting will just melt off. I cut the cake almost in half (Yes, I kept the bigger piece for my Hawthornelets.) and started frosting Bobby's "half."
Talk about a moist, excellent cake.
There's Bobby's frosted half and what's left of the Hawthornelets' "half." Middle Hawthorne ate that much cake before it was even frosted. If you ever need a quick, delicious cake to whip up in no time, this is it.

I can, like, totally vouch for this cake, as Rosie also made it for my last birthday. It is yumm-o (sorry Rosie).

....oh my goodness this cake IS/WAS so good....I cooled the cake before frosting anyway since I got busy. I thought I would take some to work today, but there wasn't any left...so to quote a friend..."tastes like more"
