Lunch Today At The Hawthornes.

Mr. Hawthorne and I decided to use up some leftovers for lunch today. We had some Mahi Mahi with the pistachios from the other night, so Mr. H. picked that apart and added some minced celery, onion, mayo, an egg, panko, salt and pepper.



If you haven't figured it out yet, we're making FISHCAKES.
And YUMMY ones at that.


These are the best potato chips EVER.
I used to think Utz were the best, but I think Rodeo Bill tops them.
I find them only at an Aldi's store in Danville, Va.


Mr. H. uses a biscuit cutter to make nice, uniform fishcakes.
We used crushed potato chips instead of bread crumbs for the crust.


I fried them up in canola oil, about two minutes each side.



Drain on paper towels, and WALLAH!



These were quite good. I squeezed some lemon juice on top, then from top right going clockwise, I have Remoulade Sauce, Tartar Sauce, Mustard Emulsion,
and my Mango/Pineapple/Habanero Sauce.
These are all excellent sauces and you just need to put them in the search at the top left to find the recipes for them.
And using potato chips for the breading was an excellent idea.
