Sunday morning staple for breakfast -
Eggs Hawthorne.
English muffin.
Sauteed ham.
Bed of spinach.
Perfectly poached egg - 2 minutes 45 seconds.
Tiara of hollandaise sauce.
Despoliation of the yolk -
always my favorite part.
Rosie, years later I am still traumatized by my mother's tragic cooked, canned spinach with vinegar, so I cannot stand the thought of cooked spinach to this day. I do, however, love raw spinach, and use that whenever I can. Eggs Benedict is an egg-cellent chance to use raw spinach,though the heat of the eggs does wilt the spinach a bit.
Rosie, you make such great food! Now I want a poached egg and none in the house. Trying to watch cholesterol, pffft. Cheers, Barbara
