Daughter Hawthorne came home this past weekend
and I took the opportunity to find more frozen meat to thaw out.
Trying to clean out the freezer
so we can fill it up again.

Coat the skin in a little olive oil.

Mr. Hawthorne gave it a dusting of Slap Ya Mama Cajun Seasoning.
Bake at 350 degrees until temperature in breast is 160.
Don't bake in a dry baking dish.
Pour a little water or chicken broth in there.
I also put the giblets right in the baking dish.

Juicy tender chicken with crispy skin.
Rice with a kick.
And I got the liver.
