Oysters Ranchera For Mr. Hawthorne.

We're still chipping away at our second bushel of oysters. Tonight, I'm making Oysters Ranchera.
Happy little shucked oysters awaiting their toppings.
Ingredients: Mr. Hawthorne's Salsa Ranchera grated mozzarella cheese combination of Panko and Ritz
Top each oyster with Salsa Ranchera. You do not want to overpower the oysters by the toppings.
Add a little cheese.
Finish with Panko and Ritz.
Ready for the broiler. Just a quick trip under. You want the toppings slightly browned. That is all. Remember, you cannot undercook an oyster, but you sure as hell can overcook one.
You want the oysters warmed through, but still plump and oceany.
That's the ticket.
Anyone have any suggestions for mo' oysters? I'm open.

Scalloped oysters. If you can get decent saltines, that is. Pickled oysters.

I have been looking at your trip-around-the-US posts (a few at a time!) and I love that you visited Cannon Beach. That's the first place I ever saw the Pacific Ocean, when my college roommate got married in Portland back in 2001. Small world, huh?

Vera, the Pacific Ocean was beautiful. Nothing like my ocean on this side. And we loved the drive down Hwy 1. We want to go back. The only thing I found slightly disconcerting were the Tsunami Evacuation Route signs. We have Hurricane Evacuation Route signs here, but at least we've known about the hurricane coming for 2 weeks.

Marilyn, I'm tired of fried oysters. Now who out there can say that?

Marion, Mama used to make scalloped oysters for Thanksgiving. I may try scalloped. And I read your grandmother's recipe for pickled and I'm not sure I'm down with that.
