In case you haven't noticed, the Hawthornes eat a lot of fish.
Today, it's mahi mahi, AKA dolphinfish.
We picked up some pretty filets at Billy's Seafood.
This usually runs $8.95 - $9.95/pound.
This is not bad,
especially considering grouper is going for $16.95/pound.
Obviously, it's not going to the Hawthornes at this price.

For a side dish,
I'm making another Corn and Black Bean Salad
I made this salad the day before.
My boys ate it all and
they requested it again today.
You know how I like my action shots.
Youngest Hawthorne is preparing the mahi mahi.
He topped the filets with butter and Old Bay
and poured a little diluted sherry in the baking dish.
You could use white wine.
Youngest Hawthorne baked these at 350 degrees
for about 25 - 30 minutes.
These were thick filets.
I served the mahi mahi
with black bean and corn salad with lime cumin dressing
and homemade salsa.
Light, filling, lots of flavors.
And pretty, too!

Youngest Hawthorne is becoming quite good at baking fish.
Hmmm.
Wonder what else I can learn him to cook.
Maybe one of the LH's will deliver some fresh fish on their westward travels one of these days. I tip well.
