Rosie Makes Zucchini Slaw.


 Rosie shamelessly ripped off
I mean, adapted, this recipe
from Lisa of Homesick Texan blogdom.


 My ingredients:
1 medium zucchini
some red onion
1 small carrot
some green pepper
1 garlic clove
1 jalapeno
handful of parsley

 I love this new julienner which Mr. Hawthorne
found on our travels in Red Lodge, Montana.

 I julienned the zucchini and the carrot
and chopped the onion and pepper.

 Add in minced garlic.

And minced jalapeno.


 And chopped parsley.

 For the dressing,
about 1/4 cup mayonnaise,
1 heaping teaspoon yellow mustard,
and a good sprinkling of hot paprika.



 Toss to coat.

  Taste test and season with salt and pepper.

 I served this crisp salad base with Mr. Hawthorne's meatloaf.
It was a welcome complement to the rich meat
and a nice diversion from cabbage.
Plus it's an excellent way to use up
the bounty of your garden.
