Rosie Makes A Strawberry Mousse.


Mr. Hawthorne and I went over the bridge to Currituck County last week to a strawberry farm where we picked our own strawberries. After eating them fresh, making smoothies, and doing strawberries every other way we could think of, Mr. Hawthorne told me on the way out to work, "Take care of these strawberries today."




Ooooookay, Mr. Hawthorne.

I got something in mind.

Here's my crust:
1 cup graham cracker crumbs
1/4 cup brown sugar
1/2 stick butter
2 TB honey







I melted the butter,
then added the graham crackers.
















Plopped in the brown sugar.













Then poured in the honey.













Pressed into a pie dish.

























I sliced the strawberries, rinsed,
and drained them.

















I Magic Bulleted some of the strawberries.
Left some slices.






I had a cup of strained strawberry puree to which I added a packet of Knox Gelatine.
Left it to soften for about 5 minutes.













Then I added 1 cup boiling water.




























Here, I have the two cups of strawberry/gelatine/water,
1 cup cream, 1/2 cup sugar, vanilla, and the strawberries.




Beat the whipped cream until slightly thickened, then added the sugar gradually, beating constantly until the cream was thick.















Added in the vanilla.












Folded the whipped cream into the strawberry and gelatine mixture.













Poured into prepared crust.

























Added a few extra strawberries on top and refrigerated.
And look at those bubbles.






I love bubbles on my mousse.
