What To Do With Leftover White Chocolate Ganache.


The other day, for a Just Ask Rosie challenge,
Ken asked me to try a fruit and white chocolate ganache dessert.
I misread the recipe and, to correct it, I ended up with 3 times as much ganache as I needed.
So, what to do with leftover white chocolate ganache.

Here's the dessert I made today.



I plated sliced apples, sprinkled blue cheese and toasted walnuts on top, added a few sliced dates and drizzled with heated white chocolate ganache.



I thought this was a pretty dish.
Very simple.
And the combination of flavors and textures truly worked:
the pungent sharpness and rich, creamy, salty, buttery sourness of the blue cheese,
the tartness and crispness of the apple,
the creamy sweetness of the ganache,
the crunch of the nuts,
the sweetness of the dates.

This was very, very good.




Pears would be very good with this too.
Maybe add some red grapes.
Some raisins.
Even chopped celery would work.
Just use your imagination.



Ken, you should definitely try this dish next time you make your white chocolate ganache.
And remember, get the good stuff.
Forget the chips.

This looks like a great fall dish and I will look forward to trying it with good ganache. I think I might use pecans and the pear idea sounds good, too.
