The Hawthornes Have An Oyster Feast For Lunch - Broiled Oysters With A Paprika/Parmesan Topping And Steamed Oysters With Lemon Butter Sauce.

We have a bushel of oysters, less 4 dozen give or take, in the fridge in our utility room. When we got these oysters on our way back from our trip the other week, we had them fried first. They were quite good, but they are very small oysters. And it's a real pain to shuck them. They are, however, perfect for steaming.
Mr. Hawthorne put these in a pot with about an inch of water, brought it to a full steam, then steamed for about 4-5 minutes, or until the oysters opened.
Just dip in melted butter with lemon juice. These were sweet and delicious. I wanted my oysters broiled with a topping, so I started shucking.
Ingredients for my oyster topping: 4 TB grated Parmesan cheese 2 TB paprika 1 TB sugar
Mix well.
Parmesan/paprika mixture on left. Melted butter on right.
I poured a little melted butter over each oyster.
Then sprinkled the parmesan/paprika mixture.
These went under a 400 degree broiler just until browned. Watch carefully so they don't burn. Generally, if you see the liquid start to bubble, it's done. Once the cheese melts, it's done.
I loves me some erysters.
