Rosie Makes Crab Meat Stuffed Mushrooms.

I still have some crab meat and cheese mixture that I didn't use with the artichokes. As I said, that would be delicious as a dip, embellished with parsley, lemon zest, minced peppers, sliced green onions, perhaps some minced red onion and a dusting of cayenne or paprika and served with assorted crackers. Or you could use it for stuffed mushrooms.
First clean the shrooms and remove the stems.
Stuff with the crab meat and cheese mixture. In case you're just tuning in, all it is is melted butter, cream cheese, and Brie. You could also add in Gruyere, Mozzarella, or Monterey Jack. Add in crab meat gently so as not to break up the lumps. Add some lemon, lime, or orange juice. Some white wine, or sherry.
I topped the crab meat with some grated Gruyere. Parmesan would work if you don't have Gruyere.
These went into my toaster oven at 300 degrees for about 20 minutes, or until browned on top.
