I had a broccoli crown in my fridge
that needed my attention.
I drained the broccoli and immediately
plunged it into ice water
to stop the cooking and set the pretty green color.

I LOVE that salad and often make it for parties. It is absolutely delicious. Honestly, I haven't made it in a while, so I think this weekend will find us enjoying this very textured salad.
ReplyDeleteI have a bag of broccoli crowns in the fridge right now and was wondering what to do with them. This is the answer! Thanks for the inspiration.
ReplyDeleteLet me know how your salads turn out.
ReplyDeleteBeen making this for years! A family favorite. I have never blanched the broccoli first...seems to turn out just fine. We add sunflower seeds instead and walnuts and no apple but will try with apple next time.
