I had a broccoli crown in my fridge
that needed my attention.
I trimmed and peeled the broccoli florets.
I brought a pan of water to a boil
and dropped the broccoli in for 2 1/2 minutes.
I drained the broccoli and immediately
plunged it into ice water
to stop the cooking
and set the pretty green color.
My ingredients:
1 bunch broccoli, peeled, trimmed, and cooked
1/3 cup raisins
1/3 cup walnuts
1/3 cup red onion, chopped
7 pieces bacon, crumbled
1 apple, chopped
1 tsp sugar
1 tsp Balsamic vinegar
1/3 cup mayonnaise
After cooking, draining, and icing the broccoli,
I coarse-chopped it.
I added the raisins, walnuts, red onion, and bacon.
And since I thought it looked so pretty and festive,
I took another picture of it.
I peeled and chopped the apple and added that last.
You don't want to chop the apple first
and assemble the rest of the ingredients,
since the apple will oxidize.
Add the apple at the end.
Toss to mix.
Add in a teaspoon of sugar.
And a teaspoon of Balsamic vinegar.
Add in 1/3 cup mayo
and mix thoroughly to coat.
This is another one of those dishes
that just has
a profusion of tastes, textures, and flavors.
Every mouthful has a different
flavor combination.
It's like eating potato chips.
I LOVE that salad and often make it for parties. It is absolutely delicious. Honestly, I haven't made it in a while, so I think this weekend will find us enjoying this very textured salad.
Been making this for years! A family favorite. I have never blanched the broccoli first...seems to turn out just fine. We add sunflower seeds instead and walnuts and no apple but will try with apple next time.
