Monday Night Dinner. Prosciutto Wrapped Chicken. Part 1 of 3.

Marion is preparing dinner for us Monday night. This is a 3 part post, so stay tuned for the Brussels Sprouts and the Potato Muffins. First is prosciutto wrapped chicken with sage..
Oh my that's pretty.
Marion pounded boneless chicken thighs until thin.
Salt, pepper, and sage leaves.
Marion rolled up the thighs.
Wrap in prosciutto and secure with toothpicks.
Lightly flour.
Saute in olive oil.
Brown all over. Boneless thighs should have an internal temperature of about 160-165 degrees.
Drain on paper towels. I chopped some garlic and more sage leaves ...
... and Marion sauteed them.
Then she deglazed the pan with white wine.
Plate with the deglazed pan juices and top with sage sprigs.
Marion, I must say, this was perfectly cooked. Very moist. I loved the sage and the prosciutto. Nice touches. And it's so pretty!
