Mr. Hawthorne Cooks Lunch. Pork Chops.

The Hawthornes always check out the Food Lion and Harris Teeter flyers in the newspaper. FL had pork roasts for $2.49/pound this week. We picked up one roast, cut it into chops and froze it, saving 3 chops for our lunch.
The chops were seasoned with freshly ground salt and pepper. Let any meat come to room temperature before cooking. And I have apples that I "accumulated" on our road trip. I do not leave a continental breakfast empty handed. I have oranges and yogurt, too.
On the way home, we stopped in Columbia for sweet potatoes. $8/bushel. Mr. Hawthorne baked them at 300 degrees in the toaster oven for about 45 minutes, until just tender, then added in butter and rolled the potatoes to coat. Cook an additional 20 minutes or so until tender.
Mr. Hawthorne peeled, cored, and chopped the apples, remembering to use my compost can.
Juice of 1/2 lemon to keep apples from browning. A little sprinkling of sugar. Little bit of water. Cook low and slow until apples are tender.
Hot skillet with a tablespoon each of butter and oil. When butter dances, add in pork chops. Sear on each side about 2-3 minutes. Then cook in a 350 degree oven about 7 minutes. You do not want gray or white pork. You want pink pork. Blushing, if you will.
And here's our lunch. Sweet potato, sweet pork, sweet apples. Sweet!
