Rosie Makes Fondue.

Last month, when Daughter Hawthorne was home, she was asking for fondue. I was all fondon't, but finally acquiesced when I saw her sad, pitiful, little hang-dog face. So, fondue it is.
I started out with an English white cheddar, Gruyere, and smoked gouda. Equal amounts of each.
Heated up a little white wine - Sauvignon Blanc. Maybe a cup.
In another pan, I melted about 2 TB butter and added in 2 TB flour. Cooked, stirring, about 2 minutes to get rid of the raw taste of the flour.
You want a slightly nutty brown to your roux.
Add in the wine, slowly, stirring.
Chop the cheese into cubes.
Add cheese and melt over low heat.
Dip a cube of bread in the cheesy goodness.
And enjoy. No bell-bottoms were worn during the making of this fondue.

DH, this is the fondue I made for you. I'm just getting around to posting it now.

oh. well I guess you remember how I never got to it at the right time. Probably ppl should know that if you want perfect fondu texture in your mouth you can't let it wait and you must seize the moment.
