Mr. Hawthorne Makes Leek And Potato Soup.

I've had some leeks languishing in my refrigerator. Mr. Hawthorne is tired of looking at them and he's utilizing them for supper.
Why, it's a Leek and 'Tater Soup.
This soup was needed. It's still Winter, but not for long. (This post was written last week.) My hyacinths and jonquils are coming up. My Daphne is blooming and emitting the most intoxicating fragrance. My willow trees are greening. And the ospreys are back. Spring is upon us. But I wanted to savor Winter once more with a warm, comforting, hearty soup.
I present to you ... Mr. Hawthorne's Leek and Potato Soup.
Mr. Hawthorne's ingredients: 3-4 TB butter 2 leeks, washed and thinly sliced 1 onion, thinly sliced 2 potatoes, peeled and thinly sliced carton of chicken broth 1 cup heavy cream freshly ground salt and pepper
I just liked this picture.
Mr. Hawthorne is liking my $6.95 Thai Kiwi knife. Props to Mr. Hawthorne for those mad knife skilz.
Next, he tore through the onion.
The leeks were flying with ferocity.
Thinly sliced leeks, onion, and potato.
I just really like all the pictures of my veggies.
Mr. Hawthorne added the leeks and onion to about 4 TB melted butter.
Needed a few squirts of ELBOO. That's EXTRA LIGHT BERTOLLI OLIVE OIL!
Keep cooking over medium heat ...
... until it gives up a good wilt.
Add in the potato slices.
Add stock to cover.
Let barely simmer until potatoes are tender. Gradually add in the rest of the stock.
Add in about 1 cup heavy cream. Salt and pepper to taste.
And serve.
You know what this needs?
A bit of color. Some paprika.
Leeky. Oniony. Creamy. Scallioney. Potatoey. Goody. Hawthorney. I likey.
