Lunch Chez Hawthorne, Thursday, April 15.

Here's the $$$$ shot:
This is our lunch, Thursday, April 15. Know what it is? No? I'll tell you. It is ... delicious.
Start out with my new fave cut of meat - the flat iron. I seasoned each side with freshly ground salt and Montreal Steak Seasoning.
The green in our meal today is a Romaine Heart. I'm making a bacon dressing with olive oil, Balsamic vinegar, Gray Poupon Dijon, and bleu cheese.
I scissored up 4-6 pieces of bacon and fried 'em up in extra light olive oil. Yes, you heard me. Olive oil.
When the bacon bits are almost done, add in a heaping tablespoon of Gray Poupon Dijon.
And 2-4 TB of Balsamic vinegar.
Mix all together.
Let's turn our attention to the Romaine now, shall we? Slice the heart and pour the "good" (TM: Ina) olive oil liberally over the cut side.
Brush. Add s & p.
Mr. Hawthorne grilled the flat iron about 3 minutes each side for rare.
Let it rest about 7-8 minutes before slicing on the bias.
Romaine hearts with lots of good olive oil drizzled o'er and freshly ground salt and pepper.
Cut and oiled side down on grill.
When the romaine went cut-side down, the oil drizzled out and made the lovely flare-ups.
Sear for a mere minute or two.
Pour bacon/mustard/Balsamic dressing over top and crumble some bleu cheese.
This was delightful. The olive oil laced the romaine with a very nice fruity flavor and the balsamic vinegar, mustard, bacon, and olive oil dressing was a lovely complement to the grilled flavor. Bleu cheese was just a perk.
This was excellent.
Be sure to cut your meat against the grain.
If you've never grilled Romaine before, and we hadn't, you're in for a treat.
Sublime. Absolutely divine.

Oh, I really like grilled Romaine. Unfortunately, I was the only person in my family who did.

I'm going to make one comment for three recipes: Flatiron, Strawberry pies and the Quiche. I'm totally running out of superlatives, and I need an excellent one for all three. That there is finer than frog fur.
