Previously,
I had made baked rock fish with a crab meat mixture
along with a roasted red pepper cream sauce
and beer-batter fried veggies.

The next day,
I used up the rest of the rock fish
and some of the crab meat
in my seafood quesadillas.

A layer of rock fish went on half of my tortilla.

I topped the fish with the crab meat mixture -
basically crab, cream cheese, white wine or sherry,
lemon juice, and cream.
That was kind of blah looking
so I needed to prettify it with some chopped peppers
and red onion.
Slices of Monterey Jack cheese.
Fold the tortilla top over the filling
and fry in vegetable oil,
until nicely browned on both sides.
Garnish with more chopped peppers, red onion,
and cilantro and some salsa.
Your seafood quesadilla looks amazing and definitely want to try to make something similar.
