Rosie Makes Some Kick Ass Shrimp Tacos.

Rosie actually has a plan for dinner tonight. Usually I just wing it, but tonight I have an actual menu. What I want is a Fried Shrimp Soft Taco with a Jalapeno Tartar Sauce and a Sesame Coleslaw. And that's exactly what I made and got. Color me HAPPY!
First, I'm making a Sesame Slaw. Here's my "recipe": a large wedge of green cabbage (maybe 1/5 medium head) a small wedge of purple cabbage (maybe 1/4 small head) red onion (maybe 1/4 small) 2 TB sugar 1/4 tsp sesame oil 2 TB malt vinegar 2 TB Mirin 2 TB homemade vinegar from Maxine You could use Balsamic or cider vinegar if you don't have any of Maxine's. 2 TB toasted sesame seeds s & p
My cabbages.
I love how God designs things.
Don't you?
Thinly slice cabbages.
Toss and mix.
Set red onion on bamboo cutting board in sun, position attractively, and photograph.
Chop said onion.
In the Tupperware: green cabbage red cabbage red onion Top Right: sesame oil malt vinegar Mirin Maxine's vinegar Bottom right: sugar toasted sesame seeds
Whisk top right with sugar until sugar is dissolved, then mix in sesame seeds.
Pour dressing over cabbages and onion. Refrigerate for at least an hour before consuming. Those flavors meld and intensify. While your coleslaw is "setting up" (Sandy-ism), make the Jalapeno Tartar Sauce.
Rosie's "recipe" for Jalapeno Tartar Sauce: 1/2 - 3/4 cup mayo 2 TB chopped red onion 4 dill chips, minced 1 TB sweet relish 1 TB canned jalapeno 1 thinly sliced radish
Add all together and put in flattering light.
Mix the goody parts with the mayonnaise and remember you have radishes.
Slice radish. Mix all together and refrigerate. Let "set up." Next and finally, Mr. Hawthorne started on the batter and shrimp.
Mr. Hawthorne Semi-Ho'd it with McCormick's Beer Batter Mix.
We've had this bottle of Corona since forever. Pour some flat beer into the McCormick mix.
Fork it until smooth.
Add shrimp to coat.
Take pictures.
Shrimp. Beautiful, perfect, fried shrimp.
Shall we assemble?

This is Rosie's. I put the pretty slaw on first.
Then I placed the shrimp on top of my slaw.
And shot it from a more dynamic angle.
I added my jalapeno tartar sauce.
I scattered on some sliced iceberg. Let's go to the Mars/Venus Thingie. Following is the way Mr. Hawthorne constructed his taco. What is he thinking?
First, he put the shrimp on a naked tortilla.
Then, he put the slaw over top. Huh?
Then he put the lettuce and the tartar on top. Ahhh ... different strokes.
Periscope up.
Mission Accomplished.

  1. Looks delicious. I've been thinking of making fish tacos, but haven't gotten around tuit yet.

  2. Let's see, I need a new superlative -- how about, "splendid"?
