Rosie Makes Chicken And Rice.

Rosie's going for simple tonight. Chicken and rice. Plus, I have the bonus of cleaning yet another package out of my freezer.
Chicken breasts, olive oil, salt and pepper.
Drizzle olive oil over the chicken. Massage it a bit.
Add salt and pepper.
Add a bit of liquid to the baking dish. I picked up a glass of unsweetened tea and used that. I wanted to see if it made a difference, flavor-wise. It didn't. You could use either water or chicken stock. Bake in a 350 degree oven for about 35 -40 minutes, until just cooked.
I decided on a side of Goya rice and red beans punched up with Ro*Tel tomatoes and green chilies.
That fork on the box just jumps out at you, doesn't it?
Pour rice in boiling water.
Add a chunk of butter. Cook according to package directions.
At the end, pour in the can of Ro*Tel and heat through.
Swirl in another bit of butter. I could make a meal off just the rice and beans.
Youngest Hawthorne enjoyed this thoroughly. Chicken was tender and juicy. And he loved the beans and rice.
