I found chicken quarters at Food Lion
on sale for $0.39 a pound.
I bought 2 10-pound bags.
Last Saturday
I cooked some of the quarters
to make chicken salad.
Here's my first version -
a curry and raisin mixture
adapted from one of Ina's recipes.

I wrapped mine in a lettuce wrap.
Loved the crunch and lightness of the lettuce
with the chicken salad.
Ina served hers in a tortilla wrap
which I think is too heavy with this particular salad.
Mr. Hawthorne suggested the lettuce wrap
and it's perfect.

My mise en place:
2 cups cooked chicken, chopped
1 scallion, chopped
1 celery stalk, chopped
1/4 cup raisins
1/3 cup cashews
1/2 cup mayonnaise
2 TB chutney (Major Grey's)
1 TB curry powder
salt and pepper are optional
After I taste-tested I decided no salt was needed.

Little piles of raisins, cashews,
chopped celery and scallions,
and chopped chicken.

Mix all together.

Add in mayo.

Add in chutney and curry.

Mix well.
Cover and refrigerate to let the flavors meld.

I had to taste test first,
so I scooped a bit on a cracker.
It was at this point Mr. Hawthorne
suggested a lettuce wrap.
Knowing him to be the credit whore that he is,
I promised I would tell my readers
that he alone is solely responsible for the
lettuce wrap idea.

I have to say,
the lettuce was inspired.
It was the perfect foil for the flavors
in the chicken salad.
