Rosie's fig tree is producing right now
and if you didn't know it,
of all the fruits,
figs are the most perishable.
So I'm trying to come up
with ways to use figs.
Any ideas from my readers would be appreciated.
I sliced them in half ...
... and stuffed them with goat cheese ...
... and pecans.
Then I wrapped a strip of bacon around the stuffed figs ...
and popped them under the broiler until the bacon was done.
Sweet figs,
tangy cheese,
pecans,
and bacon makes everything better.
I liked these.
Mr. Hawthorne didn't care for any of it.
So there you have it.
I'm not a big fan of raw figs, but the aunts make fig preserves that are pretty good. They have two versions, one that is just figs, sugar, and lemon juice. The other is sorta semiho....has the addition of strawberry jello so you think you're eating strawberry preserves.
ReplyDeleteThat's kind of like something Bill made for me when I was in TX - he took the figs and stuffed them with bloo cheese, wrapped in prosciutto, grilled, then drizzled with honey. I think. Soooo good.
ReplyDeleteMy friend Sylvia says blue cheese for the stuffing, and homemade fig preserves are nummy. fig newtons Rosie style? Filo rolls? Pork loin stuffed with figs. Fig brandy? I give up.

I hate using sure jell yet trying to get the least amount of sugar needed to make them set.
