Greens Are Calling Me.

I have a mess o' greens in my garden now -. kale, mustard, collard, and turnip greens. And every once in a while, I get a hankerin' for a plate o' greens an' 'taters. Actually, it's more than a hankering. I can hear the greens calling out to me, "Eat me ... Eat me ... You know you want me..." And then I have to have them. Listen to your body. It will tell you what you need.
You take about a bushel of greens, wash them off, then put them in a little tiny pan with about a 1/2 inch of water. Throw in a piece of salt pork fat back. Cover and barely simmer until cooked down. Couple of hours or so. Throw in some potatoes, quartered or halved, halfway through cooking time.
Greens bring out the heathen in me. I don't use a plate. I stand directly over the pan and pull out greens and potato pieces, then I swab them right on my room-temperature butter still in the wrapper.
The butter melts as I slather the potatoes and greens. Add freshly ground salt and pepper. I am eating off a butter wrapper. I am bad. Food doesn't get better than this.
The earthiness of greens is astounding. I love the healthy, green, hearty taste. The fact that I grew these only makes it all better.
Rosie is doing much more than double-dipping. I feel so much better now.

OK Rosie, sometime you are going to have to show me how to cook those types of greens. (You know my opinion on collards). But how do you get a bushel of greens into a little tiny pan?

Well, maybe I exaggerate just a bit.

Dang Rosie, you is a heathen when it comes to eatin' your greens. My grandmom would slap me silly straight from heaven if I even contemplated eatin' greens and taters off of a butter wrapper! But, you sho nuff made mah mouth water! Day-um...
