The Rosiethon. Day 2 Of Rosie's Christmas Baking. Cookie #8. Heavenly Delights.

I love these little clouds of confection.
 They are ... heavenly.
Heavenly Delights
1 stick butter, softened
1/2 cup shortening
2/3 cup sifted powdered sugar (Sift before measuring.)
1 tsp vanilla extract
 1 TB lemon juice
2 cups flour
1/2 cup finely chopped pecans
 sifted powdered sugar
 Cream butter and shortening.
 Gradually add 2/3 cup sugar,
 beating until light and fluffy.
 Gradually add flour, beating well.
Stir in chopped pecans.
Shape into small tight balls.
 Place on ungreased cookie sheets.
Bake at 350 for 20 minutes.
 Remove immediately and roll in powdered sugar.
Cool and roll again in powdered sugar.
After beating the butter and shortening,
add in the powdered sugar, beating until light and fluffy.
Add in lemon juice.
Vanilla.
Slowly add in flour. Stir in chopped pecans.
 Be sure the pecans are finely chopped.
These are delicate little balls
and if the pecan pieces are too coarse, well ... the cookie crumbles.
Roll into tight balls.
 Roll the balls in powdered sugar and place on ungreased cookie sheets.
Try not to inhale the powdered sugar when you eat these.
