The Rosiethon. Day 2 Of Rosie's Christmas Baking. Cookie #10. Peanut Butter Cookies.

Caution: Do not leave these out around your children. They need to be hidden if you want any for yourself.
Peanut Butter Cookies 3/4 cup creamy peanut butter 1/2 cup shortening 1 1/4 cups firmly packed light brown sugar 3 TB milk 1 TB vanilla 1 egg 1 3/4 cups flour 3/4 tsp salt 3/4 tsp baking soda Heat oven to 375 degrees. Combine peanut butter, shortening, brown sugar, milk, and vanilla in a large bowl. Beat at medium speed until well blended. Add egg and beat until blended. Combine flour, salt, and baking soda. Add to creamed mixture at low speed. Mix until just blended. Drop by heaping teaspoonfuls 2 inches apart on ungreased baking sheet. Flatten in crisscross pattern with a fork. Bake at 375 for 7 to 8 minutes. Cool 2 minutes on baking sheet, then transfer to rack to cool completely.
Mix peanut butter, shortening, sugar, milk, and vanilla. And guess what. I forgot the Crisco.
I mixed everything together, then beat in the egg.
Then I realized I'd forgotten to put in the Crisco. I do not think the integrity of the cookie was compromised by this mis-step.
Slowly, beat in flour mixture.
Roll into tight balls.
Press the tines of a fork in the balls to make a cross hatch design. Bake at 375 degrees, 7-8 minutes.
