The Rosiethon. Day 4 Of Rosie's Christmas Baking. #14. White Christmas Fudge.

I guess you might be wondering
what Rosie is going to do without an oven.
 She just happens to have some non-baking recipes up her sleeve.

 First up is White Christmas Fudge.

White Christmas Fudge
 2 1/2 cups confectioners sugar
 2/3 cup milk
1/2 stick butter
12 ounces white chocolate, coarsely chopped
 1/2 tsp almond extract
3/4 cup dried cherries
3/4 cup toasted almond slices
 Line 8-inch square pan with buttered foil.
 Mix confectioners sugar and milk in heavy saucepan.
Over medium heat, add butter and bring to boil stirring constantly.
Boil for another 5 minutes without stirring.
 Over low heat, add chocolate and almond extract.
Whisk until chocolate melts and mixture is smooth.
Stir in dried cherries.
Pour mixture into prepared pan.
Refrigerate 2 hours or until firm.
 Cut into 1-inch squares.
Mix sugar and milk.
Add butter and bring to boil, stirring constantly.
Boil another five minutes without stirring.
Turn heat to low and add in coarsely chopped chocolate and ...
... almond extract.
Whisk until chocolate melts and mixture is smooth.
Pour in dried cherries and toasted almonds.
Pour chocolate mixture into prepared pan and smooth it out.
Chill.
