Mr. Hawthorne Prepares Tilefish.

Isn't this pretty? Mr. Hawthorne made this lovely meal for us the other night. It's pan-seared tilefish, seasoned with Old Bay, with red onions and green peppers. First, he sauteed the onions and peppers with freshly ground salt and pepper in ELBOO (That's Extra Light Bertolli Olive Oil) just for a minute or two. Then he set the veggies aside. He added a little more ELBOO to the pan and seared the tilefish. About 3-4 minutes each side (depending on the thickness). Then he added some white wine, butter, and the veggies back in the pan. Dinner is served.
