Food Lion had cherries on sale the other day
so I bought a nice bunch.
For once, the Hawthornelets didn't go
through them all within minutes,
so the cherries were getting ready to
not be at their prime.
I thought a cherry pie would be in order.
My ingredients:
4 cups cherries, pitted
1 cup sugar
1/4 cup corn starch
1 teaspoon almond extract
And notice the pie crust.
Yes, I'm Sandra Leeing my pie.
Mix all ingredients together.
And let sit for about 15 minutes.
Pour cherry mixture into the pie shell.
And it's almost ready for the oven.
The other pie crust in the package
was broken up,
so I cut it into strips to make a lattice.
Yes. I know.
I suck at lattice weaving.
Dot with butter.
Bake in a preheated 400 degree oven
for 50-55 minutes
or until the crust is nice and brown.
I scraped up the spilled out caramel syrup
and drizzled it back over top of the pie.
What can I say?
It was tart and sweet and very cherry.
Excellent pie.
And very simple and easy to make.
And it was gone in under 24 hours.
