Rosie Continues With Granitas. Cucumber Lime Mint Granita.

Rosie is in a granita type of mind.
 The reason for this is because Rosie
is working on granita recipes
 for her September column for the Outer Banks Voice.
Lucky you.
 You get the step by steps.
 Before anybody else.
 Today I made a Cucumber/Mint/Lime Granita.
 It was sluciously divine.
Granita Ingredients:
1 large cucumber, peeled, seeded, and coarse-chopped
 1/2 cup water
 1/4 cup sugar
1/4 cup loosely packed mint leaves
1 lime, zested, and juiced
First, make a simple syrup.
 Combine water and sugar ...
... and add in mint leaves.
Bring to boil.
Simmer until sugar is dissolved.
 Simple.
Syrup.
When sugar is dissolved, turn off heat and let steep for 30 minutes.
Peel and slice cukes in half.
Scrape out seeds.
Zest one lime.
Lime zest and cucumber in processor.
Sweet Dixie in the background likes to watch me cook.
Douse lime juice over cuke mix.
Strain simple syrup into mix.

Press all life out of the mint leaves.
 You want every bit of flavor.
All ingredients are in processor-
cucumber, mint-infused simple syrup,
lime juice and zest.
 Zap it
. Until smooth.

Pour into dish and set in freezer.

After 30 minutes, rake the slush from the outside in.
Another 30 minutes.
Rake it.

 Rake it again in 30 minutes.

 Another 30 minutes.
Rake.
 
Another 30 minutes and I believe it's ready to serve.

Garnish with a sprig of mint and enjoy.
The combination of cucumber, lime, and mint is very refreshing.



Rosie's off to make more granitas now.
 Lets's see.
I have a fresh pineapple.
I have half a bushel of oranges
 Daughter Hawthorne brought me from Florida.
That's enough to get me started.
