Rosie Makes A Pineapple Granita.

Rosie's on a mission to beat the heat with refreshing and cooling granitas.
Today, I'm making a pineapple granita.
Pineapple granita ingredients:
 1 fresh pineapple
1/2 cup water
1/4 cup sugar
 juice of one lime

zest of one lime
Combine sugar and water in small saucepan.
Bring to boil, reduce to simmer until sugar is completely dissolved.
 Let cool.
Peel, core, and chop pineapple into chunks.
Add in lime juice.
Add in simple syrup.

Process until nice and smooth.
Pour into 9 x 11 inch pan.
Set in freezer.
Every 30-40 minutes, rake the granita with a fork and return to freezer.
Keep raking for about 3-4 hours until you have the desired texture.
I spooned my pineapple granita into a silver cup
 and garnished it with strawberry slices.
 Be sure to sprinkle some lime zest over top.
The zest gives this a whole new dimension of flavor.
