In my frantic frenzy to finish my
Christmas baking,
I made 3 types of sour lemon bars today
as a nice complement to the rest of the sweets.
Part 1 - Lucy's Lemon Bars.

My mise en place:
On the left, the crust ingredients:
1 cup all-purpose flour
1/2 cup softened butter
1/4 cup confectioners' sugar
On the right, the filling ingredients:
1 cup sugar
2 eggs
3 tablespoons flour
3 tablespoons lemon juice
1/2 teaspoon baking powder
grated rind from 1 lemon

For the crust,
I mixed together the flour and sugar,
then cut in the butter pieces with my pastry blender.

And pressed the crust into an 8 inch square
buttered baking dish.

Baked at 350 for 20 minutes.
Next, I made the filling.

Tossed the eggs in a bowl.

Whupped in the sugar.

Added in the flour.

And the lemon juice.

And added the grated rind.

Poured the filling over top
of the prepared, baked crust.

And baked for an additional 25 minutes.

Cooled, then sprinkled with confectioners' sugar,
and cut into squares.

Place the lemon squares on top of a cobalt blue plate,
on top of a decorative plate,
in front of a lovely poinsettia,
and take a picture.

Then take a bunch of close-ups.

Yummy shortbread layer on the bottom,
then lemon curd on top,
and powdered sugar on top of that.
These are delicious.

I also made two other
lemon/butter bars today,
but won't post until those until tomorrow,
since I needed to chill them in the fridge
before slicing.
