Day 14 Of Rosie's Christmas Baking.

Today, Saturday, I decided to make Oatmeal Cookies.
My mise en place: 2 sticks butter 1 cup firmly packed brown sugar 1/2 cup sugar 2 eggs 1 teaspoon vanilla 1 1/2 cups flour 1 teaspoon baking soda 1/2 teaspoon salt 3 cups oats Preheat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla, beating well. Add combined flour, baking soda, and salt. Mix well. Stir in oats.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
And bake for 10-12 minutes or until golden brown. Cool 1 minute on cookie sheet.
Then remove to wire rack to cool.
I floves me some oatmeal cookies.
And my close up. Next up, Peanut Butter Fudge. Thanks to Marilyn, of Foodies Untie blog for this recipe from Alton Brown.
The ingredients: 2 sticks butter 1 cup peanut butter 1 teaspoon vanilla 1 pound powdered sugar
I nuked the butter and peanut butter for 2 minutes in the microwave, then stirred it, and nuked for 2 more minutes, and stirred in the vanilla.
Then I stirred in the pound of powdered sugar.
Action shot!
MORE action!
Press fudge into a greased 8-inch square pan and smooth out.
Cut into 64 pieces.
I must say, Dixie really liked these. Thanks, Marilyn, for posting the recipe.
Dixie loves Christmas.
Visions of sugar plums are dancing in her head. Plus, she's got the Flying Nun ears
going on.

Glad Dixie likes the peanut butter fudge. It looks like I'm going to have to make another batch soon.
