Rosie Makes Moreover Quesadillas.

As you know, Rosie doesn't do "leftovers." She does "moreovers." And Rosie needs to be able to cook a meal at the drop of a hat for her little starving Hawthornelets. When they walk in the house at any hour, they expect me to have a meal waiting for them. Like I've got ESP and know they're coming in at 10 in the morning, or 3 in the afternoon, or 8 in the evening. To them, apparently mealtime is any time 24/7. The boys came in the other afternoon, hungry. Yes, I know. Big surprise.
I had more of the corn/bean mixture from making the Southwestern egg rolls so I put that on half of a tortilla.
Folded over.
Fried in a thin layer of oil ...
... until golden brown.
I drizzled some of my cheese sauce over top. Equal parts cream cheese and Velveeta. Some home made salsa. Some extra pickled jalapenos cause I like it hot. A little cumin, coriander, and cayenne pepper. Nuke until melted. Once again, I have no recipe. Taste as you go along and add ingredients. It ain't rocket science.
My little Hawthornes liked this. What's not to like? It's fried and it has cheese.
