Mr. Hawthorne Fries Up Some Dolphin Fish - AKA Mahi Mahi.

Mr. Hawthorne brought home some mahi mahi yesterday and was looking in the pantry for a batter. He usually uses McCormick's Beer Batter for Seafood but I suggested he use the batter I had used for my zucchini blossoms. It's very simple. Basically equal amounts of flour and sparkling water. (Perhaps a little more of the sparkly. Start out with equal amounts and see if it needs thinning a bit.) For the fish batter I added a sprinkling of cayenne and Old Bay seasoning.
This batter made an extremely light, crispy crust.
Oh my. This was excellent.
Look how light the crust is. It's barely there.
The fish was fried to perfection. The crust was exquisite. You have full mahi mahi flavor and light-as-a-cloud crust.

Dang, but that looks good. But do you know how hard it is to find mahi mahi around here?

Hubby went on a fishing trip a few weeks back. I have a freezer full of Mahi Mahi right now. Plan to try this recipe. Thanks!

I have a weakness for fried fish. Heck, it's so bad, sometimes I have cravings for Cap'n John's. Yours looks much better than theirs ;-)
