Rosie Makes Fiesta Salad.

The Hawthornes are entertaining.
Previously, I had made my corn bean tortilla pie -
the ultimate crowd pleaser.

I had some of the corn bean mixture leftover,
so I'm making Moreovers -
in the form of Fiesta Salad.

I chopped an avocado and some chives and scallions.

I added the avocado
to my basic mixture -
corn
black beans
chopped red, orange, yellow, and green peppers
red onion

Action shot.

Add in the scallions and chives.



Pour in the dressing.

Lime and Cumin Dressing
1/4 cup lime juice (2 limes)
2 TB cider vinegar
1 garlic clove, minced
1 tsp cumin
1/2 cup oil (Not OO or EVOO)
freshly ground salt and pepper to taste.

Mix lime juice, vinegar, garlic, and cumin.
Slowly drizzle in oil (I used canola),
whisking constantly to make an emulsion.
Season to taste with salt and pepper.

Toss to coat.

Fiesta Salad!
